Plant-Based Weight Loss || What I Eat in a Day

I’m still working on weight loss for my health. Here’s a good look into what I eat in a day—as well as what I’ve eaten in a day—to help me with my goals. Going plant-based has been a huge part of my health success and happiness.

VEGETABLE STIR FRY RECIPE:

Stir Fry Ingredients:

1 12 oz package frozen stir fry veggies

1 cup cooked rice

Fry sauce ingredients:

3 TBS coconut aminos

1 TBS sweet chili sauce

1/4 cup water

1 tsp onion powder

1/2 tsp garlic powder

1/4 tsp ginger

On medium heat, water sauté the vegetables. While vegetables are water sautéing in a frying pan, stir together the fry sauce ingredients in a small bowl.

Once vegetables are heated through and cooked to your taste, add in the rice until it’s warmed up (if using cold rice), or combined if it’s already hot.

Add stir fry sauce. Cook and stir until vegetables and rice are well-combined and the sauce is bubbly.

Homemade Hummus Recipe

This is my go-to hummus recipe. Great with veggies, bread, and crackers and even my husband who won’t eat store-bought hummus LOVES this recipe. Find the recipe below and thanks for watching!

Homemade Hummus 

2 Cups Cooked Chickpeas (Garbanzo Beans) 

1/4 Cup Tahini 

Juice of 1/2 Lemon 

1/2 Heaping tsp Himalayan Pink Salt (regular salt will work, too) 

3/4 tsp Garlic Powder 

1/4 Cup water 

1 tsp Dried Basil 

1/4 tsp Curry Powder 

Add all ingredients to a high speed blender or food processor and blend until smooth and creamy or to your taste. Refrigerate or enjoy immediately. Store in the refrigerator.
